I would love to know how to keep salsa made from dried chiles from being bitter. I've made some with dried guajillo, chile de arbol, and ancho, and I can't seem to avoid the bitterness. Thank you for your amazing videos! You're teaching me so many helpful processes 🤠

I want to know how to make restaurant style sauce for sour cream chicken enchiladas please! I've tried several recipes and none of them are right. The sauce in the restaurants don't use chicken broth in their sour cream sauce from what I can taste. It does have both a white cheese and a yellow cheese on top of the sauce. I'm pretty sure the yellow is cheddar but wanted to know what they use for the white cheese on top as well. I've been trying to recreate this sauce for a while now. I'm also a native Texan and love your YouTube channel Arnie, keep those recipes coming, everything is amazing. Thank you!
