In terms of choreography, Anakin vs Obi-Wan. But in terms of feeling legitimate tension between the two during their fight, Luke vs Vader. It also helps that Palpatine's taunts only add to the overall tension.

Both have their spiritual themes and symbolism, making them opposite mirrors of each other. The lava and hell-like setting in Revenge of the Sith symbolises not just the battle for Anakin’s soul, but a friendship in flames. Anakin and Obi-wan’s friendship falls apart, and Anakin allows it to happen, despite Obi-Wan’s repeated attempts to reason with him. The novel also ends with Obi-Wan saying, ‘You were my brother, Anakin. I loved you, but I couldn’t save you.’ It’s no wonder Obi-Wan believed Vader to be irredeemable. Luke’s duel with Vader is a battle between a father and son, not just physically, but a battle of wills. Neither side wholly good or evil, and both having moments of holding back. Luke almost falls to the dark side, but redeems Vader. In RoTS, Anakin’s love for his wife led to his fall, but in RoTJ, his love for his son brings him back.

The best fight in the entire saga is Luke vs Vader vs The Emperor. So much going on emotionally with the characters. The end of episode 6 imo is the best Star Wars has ever been.

Obi-Wan v Anakin just has it all. Choreography, visual effects, emotional stakes, and most importantly of all, memes.

Obi-Wan vs Anakin is all spectacle. Definitely fun to watch, but it doesn’t get emotional till the fight itself is over. Luke vs Vader, however, is character, plot, and theming coming together perfectly.

The Anakin and obi wan fight are definitely the better choreographed and more exciting fight, there is no doubt about it. But, in terms of meaning, and what the like v vader dual represents, Luke and Vader absolutely wins every time. This duel is the final one and the crescendo for all duels that led up to it.

The ROTS fight is cool but it is NOTHING on the Empire one, truly the greatest moment in the franchise and one of the best scenes in cinematic history.
