White Chicken Chili, Crockpot Recipe 🍲

INGREDIENTS:
- 4 Chicken Thigh Filets
- 1 Can Northern Beans (Drained and Rinsed)
- 1 Can Cannellini Beans (Drained and Rinsed)
- 1 Can Rotel Tomatoes with Green Chilis (Undrained)
- 1 Yellow Onion
- 1 Fresh Jalapeño
- 2 TBSP Ranch Seasoning
- 1 TSP Ground Cumin
- 1 TBSP Chili Powder
- 1 TSP Onion Powder
- 1 ½ Cup Stock
- 8oz Cream Cheese
- Tony’s Creole Seasoning (to your own taste)

TOPPINGS:
- Sour Cream
- Fresh Cilantro
- Tortilla Chip Strips
- Cornbread

INSTRUCTIONS:
- Wash and thoroughly clean chicken thighs.
- Season and allow chicken to marinate (with the same seasonings for your chili).
- Wash and chop yellow onion and jalapeño.
- Drain and rinse beans.
- Pan sear chicken thighs on medium high heat for 2-3 minutes on each side.
- Place the chicken thigh on the bottom of the crockpot.
- Add beans, rotel, yellow onion, jalapeño, ranch seasoning, cumin, chili powder, onion powder and chicken. Mix together.
- Place the block of cream cheese on top. DO NOT MIX.
- Cook on LOW for 6-8 hours or HIGH for 3-4 hours. 
- Remove and shred chicken. Return to crockpot and stir together. To Thicken (optional): Mix 1 TBSP of corn starch to 1/3 water, stir and add to chili. Mix well. Serve and top with toppings.
