My fear of heights kicks in just looking at this photo. But it is breathtakingly beautiful. I’ve been trying (unsuccessfully 😔) to stamp lustre dust inside a mould rather than on top of the finished bonbon, so it doesn’t rub off. It would be neat if you could show me how it’s done

I'm so happy for you! I struggle with proportions. I do small batches and always have leftover fillings. Is there a "secret" formula? For example, I made a passionfruit basil filling for a bonbon, and it took three attempts to get it right (but all attempts were good). Welcome back home!

As per videos - Pate-de-Fruit - is my Nemesis. I know it is not chocolate but kind of I count it into choco work. ❤️ Mine is or chewy, or too soft… Nemesis 😂 Any pointers would be great
