This scrap of wood never comes off my bench for a few reasons!
A little scrap of wood 10" long or so makes a great reusable notepad that can be instantly erased for each project with a few swipes of the plane.
After sharpening a hand plane iron, I take a few swipes on the edge of the scrap to see if I am getting the same thickness of shaving on the left vs right side of the plane. If one side is a heavy shaving and the other is thin, the iron is skewed and can easily be adjusted.
