Ooooh man, from Chicago here, talk about food to try! I'm half Norwegian and my wife is half Swedish. We visited back in 2017 and I had a hot dog on mashed potatoes near the Vasa museum in Stockholm. Amazing. Anywho. I design and 3D print a lot of various things, much of it Norse themed... might have to figure out some good stuff for you guys!

As someone who has mailed packages to probably a couple of dozen countries, I'd recommend that you get the insurance. You might think that the USPS is bad, but just about foreign one that I've delta with has been consistently inconsistent...😅
