A nice challenge is to write a solid Saturn emulator for a portable SoC device that can actually run Saturn games at 60 fps :) An overclocked Raspberry Pi 4 can run some 2D Saturn games pretty decent but not so much the 3D games. Or how about we bring back the beloved PS Vita back from the dead? I wonder who still makes games for it as a passion project
