Potatoes can be made into almost anything, but rice is also good In conclusion... both, both is good

Potatoes can go bad in time. So the choice is really between rice and noodles. (dried) Both can last a long time on the shelf. Rice requires limited water whereas pasta requires more of it. That is if you don't rinse the rice. I just find rice to be easier than pasta in general.

I’m South Indian so I’m already living the rice as a important staple life. We have rice with every curry, and almost anything.
