As kids, chicken gizzards & hearts were a filling meal. Cheap protein with mashed potatoes & some green vegetable on the side. Mom would dredge them with seasoned flour, brown them in some kind of fat, then stack them up on a metal privet in her huge, heavy skillet. Add a little water to the bottom & cover them with the heavy lid. They would braise over a low flame until tender. She'd add some milk to the gravy liquid in the bottom of the skillet, making what she called farmhouse gravy. Adjust the seasoning while Dad hand mashed a huge pot of potatoes. There were 6 of us. Green beans or peas on the side. It was filling & delicious! Yours looks good, too! Will have to try it. Thank you!
