Learned in a quick how to by him, years ago on TV... roast it at 450. Cover it if it'sa an 18lb turkey and crisp for the last bit... So good. Tldr: I roast poultry like I have a grudge on it now.

I wish chefs would teach more people simple cooking. “Less is more” works so much better for home cooks. Perfect example: carbonara- 5 ingredients for delicious eating
