I've made this twice this week already! Simplified the recipe a bit and used store-bought guacamole instead of the avocado crema, but the filling is incredible and will absolutely be added to my rotation

These tacos were amazing! So quick and simple to make. I didn’t have chipotle so just mixed in my favorite hot sauce. Extra salsa on the side for dipping. May very well get put into rotation for frequent dinner ideas.

Looks good but also like a bit of work with multiple things to prep the day before. Definitely for a day or two when I'm physically feeling better and have more energy. I saw your notes on using corn tortillas instead as a GF option. Glad it still works out for us with a gluten intolerance. Thanks. They look amazing.
