It is definitely the collision detection that is causing the framerate dump at 383 mobs. Disabling it lets me put 1500 mobs on screen with zero slowdown.
Vampire Survivors also does this, incidentally. Enemies don't actually collide with anything - they can walk right through objects, walls, and each other. I will stick this in my back pocket just in case I need to go the same route.
