It's awesome to see new ideas being tried. As someone who operates pop up kiosks at malls, I'd suggest not to take a long term lease initially. It's best to test out different sites and see where you get the best results. Even small differences in location inside a mall can make a big difference to revenue. If it's practical try different malls as well. We tend to do well at brand outlet centres. Good luck. Hope it booms.
