I asked Andy from @TechteamGB for advice, and he put me in touch with @asusrog. They set me up with this bonkers dual screen laptop, the ROG Zephyrus Duo 16. When I gradually realised I could use the 2nd screen as a touch pad to play virtual instruments and controls I got really quite excited. Since then I've been making music on the train and playing the parts in live without any kind of external keyboard or interface.
