i’ve been living in Thailand for 10 years - and the one thing I miss the most is Reeds Ginger brew - please please tell me how to make it i’ve done basic ginger bug sodas / but never able to get that strong reeds spiced flavor - it would change my life!

I use glass swing top bottles. One way to minimize the mess if a bottle shatters is to place the fermenting bottles in a large box or storage container. Ginger bugs seem to be much more volatile than my kombucha or water kefir, but I can't bring myself to use plastic. Putting the fermenting bottles in containers has been a great way to reduce mess. I’ve been experimenting with a simple ginger bug and it really came through.
This isn't the classic Jamaican ginger beer with clove and lime. It's a stripped-down, natural ferment using just ginger and sugar. Super fizzy and sharp with that real homemade vibe.
I even used the bug to make some fizzy fruit sodas and they slapped.
