Fourth Option: Make a good and thorough recap of just GGO. Even though the anime didn't faithfully adapt some parts of the Phantom Bullet arc, I still think it's solid at portraying Kirito's PTSD after two years in the death game. I also like how Death Gun references past villains by using PoH's phrase "It's Showtime," XaXa's mask, and the standard Laughing Coffin attire. If you do that, please stress that Shinkawa was going for a double suicide, hence the death gun. He was going to kill Sinon and then kill himself so that they could die together, and I don't know how people miss that. Your content's great either way, so if you skip to Alicization that's fine as well.

GGO arc tied pretty well into the first arc. It makes sense that there are Lauging Coffin survivors, sinse they were imprisoned, themm hunting people is smart in a story point.

The Fairy Arc isn't that important and you can skip it if you want, but the Phantom Bullet Arc in Gun Gale is important for introducing Kirito's part-time job in the government and reintroducing Laughing Coffin as the main villain. Also the chemical Succinylcholine which stops the heart.
