I have a request! I used to live in Colorado Springs. My fav restaurant was SeƱor Manuel’s where they served a Mondongo Burrito. I need to make it. I don’t know what it is or where it came from and have been confused by the research I’ve done. Help. We don’t have such a thing in San Diego as far as I can tell.
