Was really pleased to find your YouTube videos. Was a big fan of your prior Mexican food culture and cooking show, and these are the current iteration of that. Nice to see the passion still fires you to share recipes and how-to in a really relatable way. Mexican cuisine is probably my favorite and many dishes are very easy to pull together and cook. Will keep watching, cheers from a fellow native Illinoisan and former far north suburbs dweller!

Rick, what a great teacher, explainer, and person you are. I, and many of my friends, have followed you throughout all of the Mexico, One Plate.... series over the years. I can honestly say I have seen every episode that you ever made (and hopefully will continue to make)!! I have learned SOOOOO much from your videos and expertise over the years....from little things such as knife skills, to "deflaming the onion" for salsa, to...gosh, I could go on for hours. We even did a pit in the backyard, which we...for 10 consecutive years and counting (Thanks to your "A Pig, A Pit, and a Plan") episode inspired us to do for an annual 25-30 person block party. Now, everyone in the neighnorhood knows about achiote paste, mexican markets, epasote, and all of the things that you so often use during your cooking. Some of the best times that we have had down here in Raleigh, NC over the past few summers have been focused around digging the pit, lining it with bricks, building a great fire, getting a large roasting pan and lining it with banana leaves, marinating with the achiote paste, and putting it in the ground and covering it for several hours (trials and errrors we have had a plenty) while eagerly awaiting it to cook! It is always an absolute hit, as are the salsas, and everything else you have taught me to cook. You have truly brought a ton of joy to my entire neighborhood for many years now, and I have passed on your knowledge, shows, and social media connections to many friends, all of whom absolutely love it. So, I say all of that to simply say this...THANKS!!! and continue to do what you are doing! We really love you and all of your content that you put out. It is truly inspiring, educational, and delicious!

I'm bedridden and can't cook anymore, but watching your videos makes me feel like I'm back in my kitchen surrounded by herbs and spices, pouring love into every dish I cook. Thank you for giving me a chance to reminisce. Your passion and talent shine through every video.
