I do think canning is overrated. It takes up a ton of space, the food often loses nutrition, etc. However, it's still more economical and practical than freeze drying for most things.

A Freeze dryer is very expensive.....not everyone can afford those. Canning is much more cost friendly. More work but worth it.

Canning an investment but is affordable, regular freezing is even more affordable. Freeze drying is unattainable for many people. I'm happy for you if you can buy one but I'd say freezing and canning are my go to preservations. Dehydrating is much more affordable then freeze drying but I prefer my canning and freezing.

Not everyone has the budget for a freeze dryer, so No, canning is NOT overrated. Besides, it is ready in the can just has to be heated thru, no need for reconstitution.

Yeah even 6yrs into my gardening journey. Freeze drying is a dream. They are not priced for the average household income. :-(

Owning a freeze dryer is definitely a dream. One day it will come true but for a young family, canning is working just fine for now 😊

We love our freeze dryer and our canning. Freeze dried green beans are not great a side warmed up, canned are. Most veggies freeze dried are great in soups, stews and stir-fry. Freeze dried fruit is great as a snack but we need canned fruit for pies and desserts. Like this some things are great! And some are better canned or frozen. Also, when tomatoes are ready is is easier to deal with the abundance with my canner as the freeze dryer has limited space and takes a long time

We lose power a lot. Which means we don’t have water. Ideally we would have a generac, and eventually we will get one. So, I love my canned foods because I don’t need to worry about water. We have a freeze dryer too and love it. But, our water storage is needed for drinking for us and the animals. So, for us it definitely is not over rated. I love my freeze dryer for liquids and herbs. Bone broth, raw milk, eggs, etc. I grow celery and never eat it fresh. It always goes to the freeze dryer and I powder it to make my homemade seasonings. Our goats are cranking out the milk this year. I’m so proud of my girls! And we put 12 deer a year in the freezer, and I use all the bones to make a ton of bone broth. I freeze and freeze dry that because we have such an abundance of it. Canned meat is my fast food. I will can chicken or deer meat. Then if I need something quick I can whip up some meat and gravy and have that over some toast. If we grew more fruit (planted 20 fruit trees this year!) then I would definitely freeze dry more. I don’t grow broccoli. We grow cabbage, okra, greenbeans, cucumbers, summer squash, purple hull peas, peppers, and tomatoes. Potatoes, sweet potatoes, winter squash, and mellons. Dent corn and sunflowers. Our garden is 3 acres. It’s a full time job. I’m going to try and do carrots and beets this fall. We are in south Arkansas. They don’t do well in the spring here. Anywho…. I don’t love to freeze dry those things. Although we do have 240 tomato plants this year and I want to try doing tomato sauce. That way I can make tomato paste out of it. I like to dehydrate all my summer squash. It comes back beautifully in winter soups. It doesn’t disintegrate. I also dehydrate cherry tomatoes for snacks.

Canning for me is the only way to go, freezing you have to remember to thaw beforehand and have taken it out of freezer placed in fridge and forgot. Canning ready to eat even without heating up if you care not to.
