Depends on your taste bud and food, pretty much all parts have good cuisine if you like highly seasoned food and siruped desserts eastern side of the turkey would be better or if you like more like sea based cuisine you may try eagen or Mediterranean side or to the northern sides for plant and meat based cuisine or to the Balkans for the eurasian mixed foods so it pretty much depends on your taste but I'm sure you would not disappoint if you go to bolu which is called "province of chefs" among turkish people
