A few notes (apologies for being ThatDudeTM but I can't help it :'D); - European influences in terms of armor design is highly misunderstood and generalized due to popular media such as Kurosawa Kagemusha. We have two entries of European armor being gifted before the 1600, and they are well recorded by both European and Japanese sources. One in 1554 iirc and the other following the return of the Tenshō mission in 1591. In between and before, the desert, plus a good lack of surviving items with such features. I would not say it was common at all, and even if we look at how Japanese armor evolved (at least for cuirasses, the helmet is a tad more complicated but traditional designs made of plates retained some bulletproof capacity) larger plates cuirasses were developed in Aizu, Odawara and the Kantō which was quite far off Nanban trade networks, and those armors with plates development such as the Yukishita dō, the Kantō style go-mai dō and the kozunari helmets had very distinctive Japanese features. Moreover, most Nanban gusoku were locally made and not imported, just as the teppō muskets. - There is a serrated katana known as kaifutō 海部刀, although many are more akin to wakizashi. To be fair, they have a serrated back edge and not the main one, but still. They were used in boats and were quite convenient as tools.

Honestly I'm kind of glad that Assassin's Creed has just been embracing the video game elements lately. It feels like ever since Odyssey (I will despise the conquest system for the rest of my days), their ideas for the gameplay and their ideas for the historical element of each game have been kind of tugging at each other, so it's nice to see that things might have been more on the same page.
