Sour Espresso Isn’t “Bright” — It’s Under-Extraction

If your espresso tastes sharp, puckering, or lemon-like, that’s not “bright acidity.”
That’s sourness — and it usually means your shot didn’t extract far enough.

Bright acidity is clean and lively. Sour espresso tastes thin, unripe, and unfinished.

The real cause: under-extraction

Espresso extracts in stages:

acids

sugars

body + bitters

If water moves through the puck too fast, you get mostly acids. That’s where sour shots come from.

Quick signs you’re under-extracting

Shot runs fast and watery

Pale color, weak crema

Sour taste dominates everything

Fix ladder (change ONE thing at a time)

1) Grind finer
Most sour shots are too coarse. Finer grind = more contact time = more sweetness.

2) Lock your ratio
Start around 1:2 (example: 18g in → 36g out). If you’re pulling long, stop earlier.

3) Raise temp (if you can)
Too cool = poor extraction. Bump it a little if your machine allows.

4) Clean up puck prep
Even distribution + level tamp = less channeling = more even extraction.

How you’ll know it’s fixed

Sourness fades. Sweetness shows up. The finish feels complete.
