Kadai Paneer is a popular North Indian dish made with paneer (cottage cheese), bell peppers, tomatoes, and a blend of aromatic spices. Here's a simple recipe:
Ingredients:
250g paneer (cubed)
1 large onion (finely chopped)
1 large tomato (finely chopped)
1 green bell pepper (sliced)
1 red bell pepper (sliced)
1-2 green chilies (slit)
1 tbsp ginger-garlic paste
1 tbsp Kadai masala (recipe below or store-bought)
1 tsp cumin seeds
1 tsp coriander powder
1/2 tsp turmeric powder
1 tsp red chili powder
Salt to taste
2 tbsp oil or ghee
Fresh cilantro for garnish
For Kadai Masala (optional):
1 tsp coriander seeds
1 tsp cumin seeds
2 dried red chilies
1/2 tsp fennel seeds
Note: If you want to make Kadai masala at home, dry roast all the ingredients mentioned for the Kadai masala and grind them into a coarse powder.
Instructions:
Prepare the Kadai Masala (if homemade):
Dry roast coriander seeds, cumin seeds, fennel seeds, and dried red chilies in a pan until fragrant. Cool and grind them into a coarse powder. Set aside.
Prepare the Paneer:
Heat some oil in a pan and lightly fry the paneer cubes until golden brown. Remove and set aside.
Cook the Vegetables:
In the same pan, heat oil and add cumin seeds. Once they splutter, add chopped onions and saut├й until golden brown.
Add ginger-garlic paste and green chilies, and saut├й for another minute.
Add the chopped tomatoes and cook until they soften and turn mushy.
Add Spices:
Add turmeric powder, red chili powder, coriander powder, and salt. Stir well and cook for 2-3 minutes until the spices are well blended.
Combine Everything:
Add the sliced bell peppers and saut├й them for a couple of minutes, maintaining their crunch.
Add the prepared Kadai masala and mix well.
Final Touch:
Add the fried paneer cubes to the pan and gently toss to coat them in the masala. Cook for another 2-3 minutes, allowing the paneer to absorb the flavors.
Serve:
Garnish with fresh cilantro and serve hot with roti, naan, or rice.
