Braised Spring Bamboo Shoots
One of my favorite spring dishes! 🌱

🥘 Ingredients:
8–10 oz (about 250g) fresh spring bamboo shoots
3 oz (about 80g) pork belly
3–4 slices ginger
1 green onion
1 tbsp light soy sauce
½ tbsp dark soy sauce (for color)
1 tsp sugar
½ tsp salt (for blanching)
1 tbsp cooking oil
👩‍🍳 Instructions:
1.Prep the bamboo shoots:
Peel and clean the bamboo shoots, trim off the tough base, and cut into strips.
2.Blanch to remove bitterness:
Bring water to a boil, add ½ tsp salt, and blanch the bamboo shoots for 2 minutes. Drain and set aside.
3.Prepare the aromatics and meat:
Slice ginger and chop the green onion. Thinly slice the pork belly.
4.Fry the pork:
Heat 1 tbsp oil in a pan. Add the ginger slices and pork belly, cooking over low heat until the meat turns slightly golden and fragrant.
5.Add bamboo shoots:
Toss in the blanched bamboo shoots and stir-fry for 1–2 minutes.
6.Season and color:
Add light soy sauce, dark soy sauce, and sugar. Stir well to coat everything evenly.
7.Simmer to soak in flavor:
Cover and simmer on low for about 3 minutes. The bamboo shoots will release their own moisture—no extra water needed.
8.Finish and serve:
Uncover, give it a quick toss, and serve with a sprinkle of chopped green onion. Enjoy!
