So excited to experiment with this! It’s called the kabocha squash. (Grown in Mexico)

Kabocha is a Japanese winter squash, also called a Japanese pumpkin, known for its sweet, nutty flavor and velvety texture, similar to a mix of pumpkin and sweet potato. It has a hard, dark green, bumpy rind (which is edible) and bright yellow-orange flesh, and is used in both sweet and savory dishes like soups, curries, and tempura.
