Prawn and Lemongrass oil

Ingredients:
Prawn head and shells โ€“ 500g of prawns
Lemongrass โ€“ 2 sticks
Garlic โ€“ 4 cloves
Ginger โ€“ 20g
Extra Virgin Coconut oil 250 ml

Method:
Separate all prawn heads and shells. Rinse quickly and put into a strainer to lose excess water.
In a saucepan, heat all ingredients together without oil until they start caramelizing (5โ€“7 minutes).
Add the oil to the mixture; keep heat very low around 80โ€“90ยฐC, let gently infuse for 25โ€“30 minutes.
Remove from heat and let cool slightly; blend the mixture using a blender or hand blender.
Strain through a fine sieve.
Keep/store in a bottle.

To use for:
Any seafood dishes
Ramen finishing oil
Nasi goreng
To make prawn taste mayonnaise cream

Beetroot โ€“ 1 (200g)
Carrots โ€“ 1 (120g)
Fresh ginger โ€“ 50g
Lime or lemon โ€“ 1
Turmeric โ€“ 10g (or 1 teaspoon dried turmeric powder)
Kurumba water โ€“ 300 ml

- Method:
Add all ingredients to the blender
Blend until smooth
Strain (optional, for a fine texture)
Serve immediately

Process
- Grind all ingredients together using a grinder.
- Spread the mixture onto a baking tray or a wooden cutting board.
- Cut into rectangular pieces.

Beef Pasta Sauce

Ingredients:
- Beef โ€“ 1 kg
- Tomato Sauce โ€“ 500 g
- Carrots โ€“ 100 g
- Onion โ€“ 200 g
- Garlic โ€“ 2 cloves
- Leek โ€“ 80 g
- Olive oil โ€“ 80 ml
- Salt and pepper โ€“ to taste


Method:
- Sautรฉ beef with olive oil.
- Add medium diced onion, leek, carrots, and garlic. Sautรฉ for about 15 minutes. Add salt and pepper to taste.
- Then add tomato sauce.
- Let it cook for 1 hour.


Serving Suggestion:
- Best with fresh tagliatelle or lasagna.

Prawn Mango Chili Heat Pizza

โ€ขโ  โ Ingredients
- Gluten-free pizza dough โ€“ 150g
(Gluten-free pizza recipe)
- Mozzarella cheese โ€“ 120g
- Tomato sauce โ€“ 100g
- Mango (diced, medium) โ€“ 120g
- Prawns (cleaned) โ€“ 200g
- Onion โ€“ 80g (julienned slices)
- Nai miris โ€“ 1 (julienned, without seeds)
- Curry leaves โ€“ a little
- Chili flakes โ€“ 5g
- Kithul treacle or honey โ€“ 5g
- Coconut oil โ€“ 10ml

โ€ขโ  โ Method
- Preheat the oven to 220ยฐC.
- Heat coconut oil in a pan. Add chili flakes, curry leaves, and prawns.
- Then add onion, mango, and sauce. Cook for about 8 minutes.
- Add honey and salt to taste.
- Roll out the pizza dough and spread tomato sauce.
- Bake for 10 minutes.
- Remove the pizza base from the oven.
- Assemble the prawn mixture and add mozzarella cheese.
- Bake again for another 10 minutes.
- Remove from the oven and serve nicely on a wooden plate.

Ingredients
- Oats โ€“ 100 g
- Rice flour โ€“ 100 g
- Dates โ€“ 100 g
- Baking powder โ€“ 1 spoon
- Chocolate powder โ€“ 2 spoons
- Protein powder โ€“ 2 scoops
- Coconut oil โ€“ 3 tbsp
- Baking soda โ€“ 1 teaspoon
- Egg โ€“ 1
- Chocolate chips โ€“ 100 g

Method
- Mix all the ingredients together to form a dough.
- Shape the dough into round cookies using your hands.
- Place the cookies on a baking tray.
- Bake for 15 minutes at 170ยฐC.

Chicken Steak with Village Style Manioc Mix with Pol Sambol

Ingredients
Chicken breast โ€“ 200g
Flatten the chicken breast using a kitchen hammer.
Pan sear for 3 minutes each side.
Manioc with Nai Miris Sambol
Clean the manioc (cassava) and cut into large diced pieces.
Boil until soft texture.

Nai Miris Sambol
Using the following ingredients:
2 Nai miris (without seeds)
1 teaspoon chili salt
1 garlic clove
Grated coconut โ€“ 150g
Half lemon
Mix ingredients according to the video.
Mix the boiled manioc and pol sambol together.

Plating
Plate nicely pan seared chicken breast and manioc with pol sambol.

Garnish
Garnish with sesame chili oil and fresh curry leaves.

Cucumber Mint Lemon Refresher

Ingredients
Cucumber โ€“ 2
Lemon โ€“ 1 (plus 1 extra for garnish)
Mint โ€“ A few fresh leaves
Ginger โ€“ 50 g
Water or Kurumba (King Coconut) water โ€“ 2 glasses
Soaked chia seeds โ€“ for garnish

Method
Wash and clean all the ingredients well.
Cut the cucumber, lemon, and ginger into small pieces.
Add all ingredients into a blender with water or kurumba water.
Blend until smooth.
Strain the juice if you prefer a smoother texture.
Pour into a glass and garnish with fresh lemon slices, mint leaves, and soaked chia seeds.
