Veggie-Loaded Fried Rice
Ingredients
• 2 tbsp olive oil
• 1 medium onion, diced
• 1 cup sweet peppers, diced (any color)
• 2 cups shredded cabbage (mix of green + red)
• 2 cups grated carrots
• 1 cup cooked rice (preferably day-old)
• 1–2 tbsp soy sauce (to taste)
• 1 tsp curry powder
• ½ tsp ground coriander
• ½ tsp ground cumin
• ½ tsp black pepper
• ½ tsp garlic powder or 1 tsp garlic paste
Instructions
1. Heat olive oil in a skillet over medium heat. Add diced onion and peppers; sauté for 1–2 minutes until fragrant.
2. Stir in shredded cabbage and grated carrots. Cook for 3–4 minutes until softened but still colorful.
3. Sprinkle curry, coriander, cumin, black pepper, and garlic powder/paste. Stir well to coat the veggies.
4. Add the cooked rice and soy sauce. Toss everything together until well mixed.
5. Taste, adjust seasoning if needed, and serve hot.
