Feliz Navidad True Mexico friends! 🎄I’m deep in the Mexican countryside this Christmas. And for last night’s dinner we cooked the turkey in the style of Barbacoa from Hidalgo. So it was a pit-roasted turkey (not lamb!) wrapped in maguey leaves. Incredible! The consomé / broth produced in this 12-hour process is amazing too 👌💚🇲🇽

I ate at a legendary under-the-bridge 24-hour taco stand today! Tacos from Super Tacos Chupacabras are 👌 Great sides to load your taco too...
The colourful 'Chupacabras' taco has Bisteck, Cecina, and Chorizo. The name is awesome. If you don't know, the Chupacabra is a legendary creature in the folklore of parts Latin America.

Busy day filming! 🎥 And after lots of walking, there's nothing better than 'tunas'🌵 to rehydrate. I love the tuna season! (July-September). As many of you know, this is the juicy fruit of the nopal cactus. In English, they are often called 'Mexico's Prickly Pear'. Awful translation. Just call them tunas 💚🇲🇽

Something you didn't know: I love Tortitas de Espinacas! 😋🥬 (spinach). This beauty I ate for lunch today was served in a delicious tomato-based sauce and was 'capeado' (coated in beaten eggs and fried). I find it VERY hard to resist the less healthy capeado option for dishes like this, such as Chile Relleno. With or without... Capeado? Sin Capear? It's a very Mexican dilemma!
