Moldovan Zeama
(Chicken noodle Soup)
chicken noodle soup recipe, or zeama as it’s known in Moldova, is a family favorite Soup across Eastern Europe.
The succulence of the chicken, earthiness of the vegetables, and softness of the noodles all meld within a steaming hot broth of goodness that can be enjoyed on its own, or as a side dish to other courses.

Cuisine: Moldovan (Russian cuisine)

Total Time1 hour 10 minutes
Servings:6
For Soup broth:
Ingredients
1 small chicken cut up or 10 pieces of chicken
4-5 cups water
1 onion diced
1 carrot cut into bite size pieces
1 whole green chilli
1 large tomato diced
2 cups of homemade noodles
3 Tablespoons of lemon juice
1/2 cup coriander leaves fresh chopped
1/2 cup dill weed chopped
3 Tablespoons fresh squeezed lemon juice.
Salt and pepper to taste
lemon slices to garnish
Method:
In a large pot put in the chicken pieces with water.
Bring to a boil gently and start removing the froth as it rises to the top, just skim it off with a spoon.
Add the chopped onion, tomato, carrot, green chilli, coriander leaf along with some salt and pepper.
Cook until chicken is cooked through and then add the egg noodles and lemon juice.
Cover the pan and remove from heat and let sit covered to let the flavors mix together.
Ladle into bowls and garnish with coriander leaves and lemon slices.
Serve warm with freshly baked Croutons.
For egg noodles:
2 large eggs
3/4 teaspoon salt
1 1/2 cups all-purpose flour
2 tbsp of milk if needed
Method:
Mix eggs , flour and salt together until smooth. Add additional flour, just a small spoonful at a time, until the dough comes together in a ball, but is still slightly sticky.
Dump dough out onto a floured surface. Use well floured hands to knead the dough with your hands, until it's no longer sticky, about 3-5 minutes. Allow the dough to rest for 10 -15 minutes.
Roll out onto a lightly floured counter until it’s very thin — less than 1/4” thick or paper thin.
Use a sharp knife or pizza cutting wheel to cut the noodles into long strips, however narrow or wide you like. I like to roughly gather them with my fingers into a pile to make them more shapely, and not so flat. You could even twist some with your fingers to make them prettier. Then place them in a ziplock bag or air-tight container.
HOMEMADE CROUTONS
Ingredients:
4-5 slices of bread (about 12 ounces), cut into 3/4-inch cubes
1/4 cup of olive oil
2 teaspoons Italian seasoning, homemade or store-bought
1 teaspoon garlic powder
3/4 teaspoon fine sea salt
1/2 teaspoon black pepper
Method:
Preheat the oven to 375°F. Line a large baking sheet set aside.
In a large bowl, evenly drizzle the olive oil over the bread chunks. Then evenly sprinkle the day seasoning, garlic powder, salt and pepper over the bread. Toss gently until well-combined.
Spread the bread cubes out in a single layer on a baking sheet.
Bake until golden, turning once halfway through cooking in order to brown all sides of the croutons. watch to be sure that they do not burn. (Mine generally take between 15-20 minutes.)
Remove from the oven, and let cool completely. Use immediately, or store in an air-tight container for 5-6 days.

MUTTON YAKHNI BIRYANI
Ingredients:
For yakhni:
1 ½ kg mutton with meat and bones
Spices:
½ tbsp black pepper – (kali mirch)
3 tbsp coriander seed – (dhanya)
2 tbsp fennel seed – (saunf)
2 inch cinnamon – (dal cheeni)
1-2 black cardamom – (bari elaichi)
4 green cardamom – (choti elaichi)
1 - 2 bay leaf – (tez patta)
1 star anise – (badiyaan phool)
7 clove – (laong)
½ tbsp coriander powder
1-2 tbsp- Dry zeera
1 tsp - Red crushed chilli flakes
1 small onion – cut four pieces
1 whole garlic – washed
4 -5 glasses of water
Salt – to taste
For Rice quantity:
4 cup basmati rice – soak for 90 minutes or use (best quality Basmati rice) soaked for 20 - 25 minutes.
Pulao masala Ingredients:
* 3-4 green chillies (2-3mini size whole)
* 2-3 tablespoons of ginger garlic paste
* 4-5 tomato – chopped
* 7-8 dried plum – (aloo Bukhara)
* 1 cup fresh yogurt
* 1 tsp all spices Powder
* 1 tsp nutmeg n mace Powder (jaifal javatri)
* ¼ teaspoon yellow or orange food colour.(used in good quality).
* Oil 1 - 1/2 large cup.
Method For Yakhni (Broth)
Put meat, all dry spices, dry zeera ,fenel seeds, coriander seeds, 1 whole garlic , onion sliced, crushed red chilli flakes, water and salt in a stainless steel pot. Bring it to boil then cover the lid tightly and cook for 45 minutes to 1 hour on medium heat. Until cooked.
When Yakhni is ready. Strain Yakhni in colander. Squeeze all the ingredients tightly and discard. Keep Yakhni aside.
Method for masala:
prepare biryani masala.In a thick bottomed pot, fry onion slices on slow heat for 10 minutes. Now, add green Cardamom, ginger garlic paste fry nicely then add tomatoes and dried plum, mix well and cover pot for 5 minutes until tomato softens and oil separates on the sides of pan.Add yogurt and cook for another 2 minutes.add green chillies n fry again now add separated mutton pieces and fry well. Finally, add Yakhni, soaked rice. Dip a finger or spoon in the pot to check the level of Yakhni above the rice layer. It should be 1 inch. If less add more water to make it 1 inch. Keep stirring occasionally.
Boil rice on medium heat until most of the water is absorbed. Then this stage adds yellow food colour solution with water or lemon juice. sprinkle all spices Powder, nutmeg n mace Powder (jaifal javatri) fried crispy brown Onion and last fresh mint leaves. Cover the lid and reduce heat to slow. (You may keep a griddle under the pot) Cook for 5-7 minutes. All water should be absorbed. Rice will be slightly sticky but give another 10 minutes resting before serving and you’ll see all grains separated.
Dish out rice in a plate and garnish with fried onions, fresh mint leaves.
Serve hot with yogurt mint raita and
Salad.
Tips:
1. fry onion slices until golden and remove another kitchen towel with all strands separated. ( Use remaining oil to fry onion slices of biryani)
2. While yakhni cook prepare your biryani masala.
4. add colour mixture in a spiral layer so it will give nice separate layers in biryani.
