🦐 Prawn Ghee Roast / Prawn Masala (Updated Version)

🟩 Ingredients:
• 200g prawns (cleaned & deveined)

🟦 For Marination:
• 1/2 tsp turmeric powder
• 1 tsp chilli powder
• Pinch of salt

🟧 For Masala Paste:
• 6–8 dried red chillies (soaked in hot water for 10 mins)
• 1 inch ginger
• 5 garlic cloves
• 3–4 tbsp water (to blend)

🟥 For Cooking:
• 1 tbsp ghee
• 1 tbsp oil
• 1 tsp cumin seeds
• 8–10 curry leaves
• 1 medium tomato, finely chopped
• 1/4 cup water
• 1 tsp kasuri methi (crushed)
• 2 tbsp chopped coriander leaves
• Salt to taste

🟦 Marinate the Prawns:
1. Mix prawns with turmeric, chilli powder and salt.
2. Rest for 10 minutes.

🟧 Make the Masala Paste:
1. Soak dried red chillies in hot water for 10 mins.
2. Blend soaked chillies with raw ginger + raw garlic + little water into a smooth paste.

🟩 Cooking Instructions:
1. Heat 1 tbsp oil in a pan.
2. Add 1 tsp cumin seeds and let them splutter.
3. Add curry leaves and fry a few seconds.
4. Add the **red chilli–ginger–garlic paste** and fry until the raw smell disappears and oil starts to separate.
5. Add chopped tomato and cook until soft.
6. Add 1/4 cup water and simmer until masala thickens.
7. In another pan, lightly toast the marinated prawns on both sides (1–2 minutes).
8. Add prawns into the masala.
9. Add crushed kasuri methi + chopped coriander.
10. Finish with 1 tbsp ghee and mix gently.

🟩 Best Served With:
• Steamed rice
• Jeera rice
• Toasted bread
