Fall into flavour this September with our seasonal salad recipe! 🍂🍽 Highlighting the best in season now—like apples, pears, sweet potatoes, walnuts, raisins, & cranberries—for a refreshing, hearty salad that celebrates the season’s bounty. Perfect for savouring the crispness of fall!



Autumn Harvest Salad with Sweet Potatoes, Apples, and Walnuts


Ingredients:



For the Salad:

2 medium sweet potatoes, peeled and diced
1 tablespoon olive oil
Salt and pepper, to taste
4 cups mixed greens (like baby spinach, arugula, and kale)
1 large apple, thinly sliced (Honeycrisp or Granny Smith work well)
1 ripe pear, thinly sliced
1/2 cup walnuts, toasted
1/4 cup raisins
1/4 cup dried cranberries



For the Dressing:

1/4 cup extra virgin olive oil
2 tablespoons apple cider vinegar
1 tablespoon maple syrup or honey
1 teaspoon Dijon mustard
Salt and pepper, to taste


Instructions:



Roast the Sweet Potatoes:

Preheat your oven to 400°F (200°C).
Toss the diced sweet potatoes with olive oil, salt, and pepper. Spread them out on a baking sheet in a single layer.
Roast for 25-30 minutes, or until tender and slightly caramelized, turning halfway through. Let them cool slightly before adding to the salad.


Prepare the Salad:

In a large salad bowl, combine the mixed greens, sliced apples, sliced pears, roasted sweet potatoes, toasted walnuts, raisins, and dried cranberries.



Make the Dressing:

In a small bowl or jar, whisk together the olive oil, apple cider vinegar, maple syrup (or honey), Dijon mustard, salt, and pepper until well combined.


Assemble the Salad:

Drizzle the dressing over the salad and toss gently to combine.
Serve immediately, enjoying the refreshing and hearty flavors of fall!


Tips:

This salad pairs beautifully with a glass of chilled New York white wine, enhancing the crisp fall flavours.
