Hey friends 💛 I’ve been sick the past few days and don’t have the energy to film today. Because of that, there won’t be a “Day 2” video going up.
I still wanted to share what we ate today though: • Breakfast: blueberry & chocolate muffins • Lunch: leftover meat from nachos to make fideos (soup-y) • Dinner: slow cooker dump & forget teriyaki chicken w/ rice
Method 1. Preheat oven 190°C/375°F. Line 12 cups. 2. Cream butter + sugar. Beat in egg. Mix in milk + vanilla. 3. In another bowl whisk flour (reserve 5g) + baking powder. 4. Fold dry into wet until just combined. 5. Divide batter in half (≈340g each).
Blueberry (6 muffins) 80g frozen blueberries tossed with 5g flour, fold in. Streusel: 40g flour, 35g sugar, 25g cold butter, ¼ tsp cinnamon. Cut to crumbs, sprinkle on top.
Chocolate (6 muffins) 20g cocoa powder 85g chocolate chips Fold both into other half. Add splash milk if thick.
Bake Bake 18–20 min until toothpick clean
🍜Mom’s Easy Fideos with Leftover Beef🍜
Ingredients: • Pasta of your choice (any kind, as much as you think you’ll need) • 1 can tomato sauce (15 oz) • 1–2 cans of water (use the tomato can to measure) • Leftover cooked ground beef • Seasonings you like (garlic, onion powder, cumin, paprika, oregano, salt, pepper, etc.)
Instructions: 1. Heat a little oil in a pan and toast your pasta until golden. 2. Dump in the can of tomato sauce. 3. Refill that same can with water 1–2 times and pour it in. 4. Add in your leftover ground beef. 5. Season to your taste. 6. Let it simmer until the noodles are cooked through.
Tip: You can cook it down thicker for a hearty pasta dish or leave it a bit soupy—it’s all about what you like best.
🍛Dump-and-Go Crockpot Teriyaki Chicken🍛
(no extra pots, no fuss, family-friendly)
Ingredients (2–2.5 lbs chicken): • 2–2.5 lbs boneless chicken thighs or breasts (frozen is okay, just add 1 hr cook time) • ½ cup soy sauce • ¼ cup brown sugar (or up to ⅓ cup if you want sweeter) • 2 tbsp rice vinegar (or apple cider vinegar) • 2 tbsp ketchup • 2 cloves garlic, minced (or ½ tsp garlic powder for mild) • 2 tbsp pineapple juice (just a little, not fruity) • Optional: pinch of ground ginger
Dump & Cook: 1. Place chicken in the crockpot. 2. Mix all other ingredients in a measuring cup, then pour over chicken. (Or just dump straight in the pot if you’re in a rush.) 3. Cook on Low 5–6 hrs or High 3–4 hrs.

Once a month we try to plan a good family outing; the kind I’d call a splurge, maybe you would too.
Whether it’s $30 or $300, I just want us to have those little moments outside of the everyday routine.
Something the kids can look forward to, something we can all do together, and something that reminds me why we work so hard in the first place🙌🏻
Last night was skating and dinner. It wasn’t perfect, because family outings with kids (& toddlers😅) never really are, but it was ours.
The kids had a blast, we had a blast! Even if me and dad were chasing the little ones the entire time🤣🥲
Little by little we continue to add another piece to the memory book❤️
