My heart, soul, and tummy are full and it is only day 2. Two of these photos is of one of my favorite meals of all time and it is the national dish of Senegal. Thieboudienne or chebu jën (among other names)—"The Rice of Fish." It consists of flavoursome fish that has been marinated with parsley, lemon, garlic, onions (and other herbs), then later cooked with tomato paste and a variety of vegetables such as lettuce, cabbage, and carrots. Yummyyyyyy. 🍽️
