"Loita Mach Bora" (āϞ⧋āχāϟāĻž āĻŽāĻžāĻ› āĻŦ⧜āĻž) is a traditional Bengali recipe made with Loita fish (Bombay duck/dry loitta), spiced up and deep-fried into delicious fritters (bora). It’s very popular in Bangladesh and West Bengal. Here’s a simple recipe:

🐟 Loita Mach Bora Recipe

Ingredients:

Loita fish (fresh or dried) – 250 g

Onion – 2 medium (finely chopped)

Green chilies – 3-4 (finely chopped)

Garlic paste – 1 tsp

Ginger paste – ÂŊ tsp

Mustard oil – 1 tbsp (for mixing)

Egg – 1 (for binding, optional)

Besan (gram flour) or rice flour – 2-3 tbsp (as needed for binding)

Turmeric powder – ÂŊ tsp

Red chili powder – ÂŊ tsp

Coriander leaves – a handful (chopped)

Salt – to taste

Oil – for deep/shallow frying

Preparation:

1. Clean the Fish

If using fresh loita: clean, wash, and boil with a pinch of turmeric and salt until soft. Debone and mash.

If using dried loita: soak in warm water for 15–20 mins, wash thoroughly, then boil and mash.



2. Make the Mixture

In a bowl, mix mashed loita fish with onion, green chili, garlic paste, ginger paste, coriander leaves, turmeric, chili powder, and salt.

Add mustard oil for flavor.

Add egg and flour to bind the mixture. Mix well.



3. Shape the Bora

Take small portions of the mixture and shape into flat patties (bora).



4. Fry

Heat oil in a pan.

Fry the boras on medium heat until golden brown and crispy.

Serve hot with plain rice, dal, and a wedge of lemon.

Can also be enjoyed as a snack with tea.
