Anchor Strength

Asada sirloin steak bites and kale street-corn salad

This recipe is a mixture of some of my favorite Pinterest recipes from Carlsbad cravings, Dinner at the zoo, and Kalefornia Kravingsđź©·

Ingredients for Kale and Street-corn salad:
-1 bunch of kale de-stemmed and finely chopped
-2 12oz bags thawed frozen corn
- 4 jalapeños, deveined, and chopped
-1/4 cup red onion finely chopped
1/2 cups chopped cilantro

Massage kale in avocado oil 1-2 tablespoons with salt and lime for a minute to tenderize. Then add the rest of your ingredients. Pour dressing over the salad and incorporate well.

Dressing:
1/3 cup avocado oil
1/4 cup fresh lime juice
2 teaspoons of honey
1 teaspoon chili powder
1/2 cumin
1/4 cup cilantro leaves
2-4 chipotle in adobo peppers
Salt and pepper
Mix ingredients in a blender preferably and add to salad.

Asada Sirloin steak bites
Ingredients:
-Sirloin steaks trimmed with all visible fat removed
-Butter
-Minced Fresh Garlic
Asada seasoning:
1 tablespoon ground cumin
1 tablespoon garlic powder
2 tsp smoked paprika
2 tsp chili powder
1 tsp salt
1 tsp onion powder
1 tsp ground coriander
1/2 tsp black pepper
1/2 tsp cayenne pepper

Stove top method:
Heat Large cast iorn skillet on medium high and add 4 tablespoons of butter.
Once pan is hot and butter has started to brown add steaks, cook them to medium rare. Set steaks aside to rest for 10 minutes. Once steaks have rested. Cut sirloin into bite sized pieces removing all fat.

Heat the same pan to medium heat. Return steak bites back to the pan along with minced garlic. Cook steak bites until they are seared on all sides. Add seasoning until steak bites are coated. (I didn’t use all my seasoning mixture, I had about 2 tablespoons left over)
Turn off the pan and let them rest.

This meal prep will require 2 meal prep containers per day. One for salad and another for the steak bites so they can be reheated.
Weigh 80 grams of protein in one meal prep container for the guys and 50 grams of protein for the ladies. Then add 2 cups of street-corn salad in another meal prep container. Allow steaks to cool completely before storing in the refrigerator.
