We’ve received a lot of questions about burning season in Chiang Mai, so we wanted to take a moment to explain what it is.

What is Burning Season?
Burning season in Chiang Mai and across much of Southeast Asia is an annual period when farmers burn their fields and crops as a way to clear land for the next agricultural cycle. This practice is common in countries like Thailand, Laos, Myanmar, and Vietnam. The burning clears leftover crops, weeds, and debris quickly and inexpensively, and the ash acts as a natural fertilizer for the soil. While it serves an important agricultural purpose, it produces a significant amount of smoke and haze that can heavily impact air quality in the region.

When Does It Occur?
In Chiang Mai specifically, burning season typically runs from February through April, with March often being the most intense month. During this period, the Air Quality Index (AQI) can reach levels that are considered unhealthy, particularly for those with respiratory conditions.

Plan Your Visit Accordingly
If you’re planning a trip to Chiang Mai or anywhere in Northern Thailand, we highly encourage you to research the air quality conditions for your travel dates and plan accordingly. Many travelers choose to visit between November and January to enjoy the cooler, clearer weather and the best air quality of the year.

Mornings in exclusive lounges with unlimited gourmet food, endless fresh fruit displays, and perfectly brewed coffee. Personal yoga sessions, unlimited monthly spa treatments that include facials, saunas, massages, nails, and foot care. First-class flights on the world’s top airlines, jetting off to a new country every three months, wherever my heart desires. Becoming fluent in at least three languages. And most importantly, coaching and mentoring others on how to create this same level of freedom and abundance for themselves.

This is exactly why we can’t give up on our dreams.

Chiang Mai, Thailand ¡ One Burner. One Pot. No Complaints.

How to Cook a Full Meal with One Pot & Zero Excuses

Living slow in Southeast Asia means you adapt. The kitchen here is a single burner and a whole lot of creativity. This is seasoned rice, caramelized mushrooms and onions, tofu cracklings, and a drizzle of crack sauce all from one pot, one after another. Here’s exactly how it went.

PHASE 1 — THE RICE 🍚
1. Wash your rice thoroughly until the water runs clear.
2. Start your kettle bottled water only out here in Thailand.
3. In the pot: salt, pepper, garlic powder, butter, and a heaping teaspoon of chili garlic oil.
4. Pour in your boiling water right over those seasonings. Let it come to a full boil.
5. Dump in the rice, bring it down to a simmer, lid on. 20 minutes. Do NOT lift that lid not once. Lifted lids = mushy rice. You’ve been warned.

PHASE 2 — THE VEG 🍄
1. While the rice is doing its thing, slice your shiitake mushrooms thin and chop half a white onion.
2. Rice done? Dump it onto a big platter. Clean the pot.
3. Olive oil in the pot, onions and mushrooms down. Let them get some color.
4. Season with salt and pepper. Keep the heat at medium and don’t rush it caramelization is where all the flavor lives. Brown = flavor.
5. Once they’re golden and soft, add them to the platter with the rice.

PHASE 3 — THE STAR ✨
1. Clean the pot one more time. Fresh olive oil in.
2. Now — Southeast Asia has this incredible thing. Vegan pork cracklings made from tofu. If you know, you know. Put them in the pan.
3. Let one side get color, then flip and hit every surface. You want texture and golden edges.
4. Deglaze with a splash of soy sauce. Let it coat everything. Pull them off the heat.
5. Add them to the platter.

PHASE 4 — THE FINISH 🔥
1. Dress the whole plate with crack sauce and chili garlic oil.
2. Serve it to the spoiled brain.
3. One burner. One pot. Still ate.

Slow travel isn’t about luxury it’s about learning to make something beautiful with what you’ve got. The brain was spoiled regardless.

Growth isn’t always pretty. 📈

We started a third YouTube channel (Philly And The Brain Slow Travel) and after a couple months of momentum… it slowed down. And honestly? That’s okay.

Anyone building something knows this feeling. The slow weeks, the frustration, the moments where you wonder if it’s worth it. But every mistake, every plateau, every setback it’s all part of the process.
If I could push through 7 years of undergrad and grad school, then years building a career in IT, I can be patient enough to build this. And so can you.
Whatever you’re working toward right now don’t stop. The reason it’s taking longer than expected might just be that life is still preparing you for it.
