As some of you may already know, my dad passed away last night after being diagnosed with stage 4 pancreatic cancer at the beginning of May. My sister and I were blessed to have an amazing father who always made his family a priority. My mom was blessed to have a supportive and loving husband for 27 years. Bridgette was so incredibly blessed to have her Grandpa Dougly who always went out of his way to make her smile. There are so many things to say about the great man my father was. I hope that the husband and father I become speaks the most to how devoted and loving my dad was. Our family has been through a lot the last few weeks, first burying my grandfather and now my father. We wanted to thank everyone for your continued thoughts and prayers during these trying times. ❤️
Dr Miller and I wanted to thank everyone for your kind words the past few days. Bridgette just had her 48 hr checkup and is doing amazing! Afterwards, I had the idea of surprising Dr Miller with one of her favorite meals for lunch. But while I was getting ready to deliver her lunch, she brought Bridgette out to the kitchen to see what was cooking. The three of us all together in the dining room meant we had to take our first family photo ❤️. A great thing about my burger recipes are that once the burgers are formed you can place them on a parchment lined baking sheet to freeze overnight. After hardening up (6-8 hours), I transfer the burgers to a freezer safe container to store for 6+ months. And knowing baby was on the way, I stocked up our freezer with as many 3-2-1 Burgers as I could fit for days like this. All I had to do for this meal was heat up the oven and in just a few minutes the burgers and my 15 Minute Fries made for a quick and easy meal that was a hit for our little family.
🍔 3-2-1 Burgers 🍔
3 cups beans, cooked 2 cups brown rice, cooked 1 cup quick cooking oats 1/4 cup liquid (ketchup, maple syrup, veg broth, etc) 2 teaspoons garlic powder 2 teaspoons onion powder 1/4 teaspoon black pepper
1. Mash the beans using a fork or mixing spoon. Then add in the remaining ingredients and mix until the mixture can easily be formed into patties.
2. Place on a parchment lined baking sheet and bake at 400 F for 25-30 minutes.
🍟 For the Fries 🍟
A bunch of white or red potatoes 1 tablespoon no salt seasoning
1. Bake the potatoes at 350 F for 45-50 minutes.
2. Allow the potatoes to cool (fridge overnight works great) before slicing 4-6 into fries or wedges. Toss the wedges with the seasoning. Place fries onto a baking sheet lined with parchment paper. Bake at 425 F for 15-25 minutes or until golden brown and crispy.

I would like to introduce everyone to Bridgette Rose Miller! She was born yesterday afternoon at 5pm and weighed in at 7 lbs 9.5 ounces. Dr Miller was just finishing up her 39th week of pregnancy and did an amazing job with her natural/ unmediated birth. In less than three hours from getting to the birthing center, we were holding Brigette in our arms. She latched onto mom right away, and hasn’t stopped feeding and sleeping since we got home. Bubbles & Bella were eager to welcome Bridgette to our “pack” and have not left her side. Dr Miller had such an incredibly healthy and enjoyable plant-based pregnancy, and we are so blessed to have our happy and healthy vegan baby home! ❤️
My decade started out as a high school football player with big dreams of playing at the highest level. A few years later my life seemed to be going just as planned. I had a full ride scholarship to The University of Nebraska and was starting as a true freshman. But unfortunately after a career ending back injury I found myself in the picture you see on the left. I was 19 years old, morbidly obese, and getting ready for a 6 1/2 hour back surgery without knowing if I would ever be able to live a normal life again. After coming out of surgery I knew if I wanted to take control of my health a major change in lifestyle was needed. Luckily after a bit of searching I came across information on the benefits of a plant-based diet. And as skeptical as I was, I knew my previous diet built around animal products was hurting not helping me. So I began by building my new diet around the simple starchy staples (rice, oats, potatoes, etc) with the addition of fruits and vegetables. It was of course different to what I had grown up eating, but after a few days I knew I was never turning back. Which leads us to the picture on the right where you find me 6 years later. I am 100 pounds lighter, have helped my family go completely plant-based, and have just written a plant-based book dedicated to helping others experience the same health transformation as I have. So with the 2010’s behind us, my goal is that the next decade is when you and your family decide to take control of a your life, health, longevity, and legacy!

We are so blessed to be a part of such an amazing community that is working so hard to make themselves and the world around them better! You all have brought us so much joy this past year. We hope that the healthy, simple, and easy to make plant-based recipes have made yours just a little better too.
