HAPPY INTERNATIONAL COFFEE DAY: What’s your coffee go-to?

Espresso, Latte or Filter Coffee?

The industry has given these roles different names — Brewer (filter coffee) and Barista (espresso). But at Hé House, founders Bam and Belle believe they can coexist in a great “coffee connoisseur.”

That question became the starting point for hh113TRE, a tasting concept that brings both methods together in Thailand’s First Sumrub Kafae, a bespoke coffee tasting experience.

Since 2021, Hé House has been developing and refining this tasting concept around a simple idea: What happens when you allow one coffee to reveal itself in more than one way?

“We didn’t create hh113TRE to say one method is better than another. We simply wanted to see what else the same coffee could become. For us, that is where the real fun begins,” says Belle.

The answer is hh113TRE; a trilogy of taste that brings together three disciplines of coffee craft (roasting, brewing, and barista) and presents a single coffee through three extractions: V60, modern espresso, and milk coffee.

For Hé House, coffee is not simply a beverage to be evaluated. It is an experience shaped by aroma, flavor, texture, temperature and technique.

Rather than competing with one another, the methods offer different ways of understanding the same coffee, so together, they tell a more complete story.

The equation has also continued to evolve and explored:
1 Terroir. 1 Extraction. 3 Roasts.
1 Extraction. 1 Roast. 3 Terroirs.

Different equations, different discoveries. But the original 113TRE remains the foundation:
1 Terroir. 1 Roast Profile. 3 Extractions.

That is what makes hh113TRE distinctive: coffee doesn’t have to fit neatly into categories. A brewer can think like a barista, and a barista can think like a brewer, allowing one coffee to reveal its full range of characters.

On this day in 1908 (June 20), Melitta Bentz transformed a simple pursuit—a cleaner, smoother cup of coffee—into an invention that shaped the way the world brew and enjoy coffee.

Frustrated by bitter coffee grounds in her cup, she punched holes into a brass pot, borrowed a piece of blotting paper from her son’s notebook, and invented what would become “The World’s First Pour-Over (Drip) Method”, “The World’s First Paper Coffee Filter” & “The World’s First Coffee Dripper”.☕️

The rest, as they say, is coffee history. 📜

So today, we raise a cup to “A Leader in Coffee Industry”and “Mother of Filter Coffee”👸🏻, with a breakfast inspired by her homeland.

But this time, let us share it through the eyes of Thai natives.

There are many things we are proud of sharing, but today, we choose to highlight Thailand’s First Sumrub Kafae (Thai Coffee Course originated at Hé House) and Pa Kao Ma 🇹🇭🧣☕️

“Pa Kao Ma” is a humble yet profound textile, woven into Thai life for over 1,000 years (around 958–1057 AD), with traces of its presence seen in historic sites like Phumin Temple.

A simple rectangular cloth, often in checkered or striped patterns—lightweight, vibrant, and endlessly versatile. It can be worn, wrapped, folded, carried. From scarf to towel, from daily utility to travel essential. More than just fabric, Pa Kao Ma reflects the simplicity and resourcefulness of Thai life across generations.
