When my kids wake up in the morning, they sometimes ask what’s in their lunchboxes for the day. This morning, when they asked and I told them it was Korean seasoned fried chicken, both of them got excited! I can already picture them enjoying their lunch at school, and it makes me so happy. 💕

Recently, I’ve been trying to make white rice a bit healthier, so I came up with an idea: adding canned chickpeas into the rice while cooking. It turned out even better than I expected—the flavor and texture are great! The salt in the canned chickpeas lightly seasons the rice while it cooks, making the rice tasty and slightly savory with added nutrition.

For about 2 cups of uncooked rice, half a can of chickpeas is perfect. I put the remaining half in a snack-size ziplock bag and keep it in the freezer. Next time you cook rice, just throw it in and cook together—highly recommended!Have a wonderful day.💕

It snowed overnight, so the kids' school had a 2-hour delay today. Thanks to the slower morning, I packed potato croquettes for their lunchboxes. 😄
For some reason, I thought it might be nice to show you how to make these, so since I had the extra time, I filmed the process while packing lunch. It definitely took longer than usual to pack lunch while filming, but once I finished everything, I felt so proud and glad that I did it! Now my kitchen looks like a battlefield after an intense fight… 😂

Anyway, my next YouTube video will be potato croquettes! They are seriously delicious, so please look forward to it. Since everyone just left the house, I’m going to eat a late breakfast, recharge a bit, and then go shovel some snow. 😅

After the holidays, I’m back to packing lunchboxes again. Bryson still hasn’t gotten tired of it and keeps requesting bulgogi. ^^
There was a time when packing lunchboxes 2–3 times a week felt exhausting… but now that I realize I won’t have that much time left to do this for my kids—especially with Bryson already in 10th grade—I genuinely feel grateful that I can pack them lunch every day.
Sharing these lunchbox ideas with all of you has also become a huge motivation for me, and it makes the whole process even more enjoyable. Thank you for being part of this little journey with me 💕

Today’s lunchbox features Korean Fried Meatballs, a dish filled with childhood memories. It’s one of my mom’s signature dishes, and it still feels special and grateful that I can now make the same food for my own kids. Maybe they take after my taste, because this has become one of their favorites too!

Since I had plenty of leftover rice from yesterday, I skipped cooking new rice and simply reheated it in the microwave. Then I seasoned it with a pinch of salt, sesame oil, and sesame seeds—similar to how you would season rice for gimbap—and it paired perfectly with the Korean Fried Meatballs.

To balance the oily flavors, I quickly made Korean-style pickled radish and carrots to add a refreshing bite. I hope the kids enjoy their lunch today. Wishing everyone a wonderful day! 💕

I made red bean steamed buns (ho-bbang) for the kids’ lunch today. I prepared the dough the night before, kept it in the fridge, and steamed the buns in the morning — such an easy lunchbox idea! It reminded me of my childhood winters in Korea, eating hot ho-bbang and blowing on them to cool them down. Personally, I’ve always preferred vegetable ho-bbang with meat and veggies over the sweet red bean ones, but living in the U.S. now, both are rare so I’ll happily eat whatever I can find. 😆

Today I made Cheese Fire Chicken because my husband, Jason, was craving it 🔥🍗As the kids grow up, their food preferences are becoming more and more different, so it’s not always easy to cook something everyone loves—but today was a big success!

The chicken was spicy, but the generous amount of cheese really mellowed out the heat. Both the kids and Jason enjoyed it so much, which made me really happy 😊 You should definitely try making this at home sometime—I highly recommend it!
