Artist, Author, Baker Problem-Solver

Food educator focused on process-driven sourdough, creative cooking & art. I have a lot of passions and the "dog-with-a-bone" energy to see them through. With a former career in professional baking and a background in graphics, marketing & communications, I’m working at simplifying the science of bread, while still being creative & telling stories.

I don't just share recipes; I teach you how to problem solve your specific environment. I am using visual tools to help navigate everything from sluggish levain and tunnelling batards in Canada to those overactive doughs and overproofed loaves we are all perplexed about.

Based in Peterborough, Ontario. Not part of a heritage farm & focused on straight talk not or confusing technical talk.

It’s just practical sourdough techniques and real-world intuition for people who just want bread that works. Plus there are cats…art…some creative ideas.

I promise not to sing and I don’t post on a schedule.

How I spent my few days off…a few more chapters to go and I might read one more book… but I’m back to editing and cooking. 👍🏻🥗🥪🎨☕️

I am working on these videos now. I hope to have them out tomorrow or late Wednesday… then I do need that break.

Whole wheat sourdough, Pullman loaf pans and why we sourdough and choosing your equipment.

Heat wave reminder.

Before your kitchen gets too hot today, fill your ice cube trays, boil a few eggs and some potatoes for easy meals, freeze any extra fruit, and cold steep some chamomile or mint tea.

A few minutes of preparation now can make the next few days much easier.

Stay hydrated, check on your pets, and check in on an elderly neighbour or someone living alone if you can.

Take care of yourselves and take care of each other.

I just want to take a minute to acknowledge all of the dads out there. I hope you have a wonderful Father’s Day tomorrow.

Enjoy your day and I hope it’s with family.

Happy Father’s Day!

This was dinner.

That took me right back to my childhood.

Homemade split pea soup and porridge bread.

My real Canadian twist? Goat cheese to finish the soup and spread on the toast, topped with fresh thyme and apple slices. Do not forget the ham.

Tomorrow I’m working on these videos, along with the foundations of chickpeas and a Canadian twist on hummus.

This is fun… and I’m full!

From fresh fruit and yogurt to experimenting with European-style porridge breads, playing with Canadian crab in a sweet potato salad, and working on a chocolate hazelnut oatmeal loaf, the kitchen has been busy lately.

One of the things I enjoy most is following an idea and seeing where it leads. Sometimes it’s an old technique, sometimes it’s a local ingredient, and sometimes it’s simply what happens when curiosity meets a cup of coffee.

What’s cooking in your kitchen this week?

I am working on this video now. Sourdough loaves, a softer sandwich style crumb. Easier on those who don’t like chewy crusts and want a sandwich.

The most recent video shows this style of bread in my open-faced burger.

I’ll have the bread video up this weekend!

A few cool ideas to share.

Berries can look deceptively sweet but don’t always deliver in drinks. Grapefruit, on the other hand, works surprisingly well with rosemary when you start mulling flavours together.

Understanding little things like that gives you a good base for creating summer drinks, winter warmers, iced teas and even fruit salads.

Tannins will also lighten when you add citrus, creating beautiful amber tones in iced teas.

I’m putting some ideas together to help keep you cool this summer, with a little flavour science mixed into the mixology.

Follow along if you wish. There will also be a few summer meals, quick breads, and ideas for turning one ingredient into four different dishes.

I’m more than sourdough. I like sharing what I’ve learned, and teaching observation is part of that too.

I have been busy. I have some basic foundational videos to finish to help me tie some of my baking and cooking together for the viewer.

I layer flavours, so you won’t get the same savoury or sweet notes if I do not give you some foundations to pull from.

Bone broth makes soup, it’s also a way to add flavour and moisture to a dish… Rosemary olive oil builds flavours too. I’m putting those basics together.

The Hazelnut sugar and buttercream… that’s a work in progress, as in it … takes multiple steps to create two dishes to get the buttercream. Plus, the cake needs a little more fat…I’ll adjust and have that up after the next test. My mom enjoyed the cake though.

Educational sourdough and baking info is also what I’ll be offering at least once a month.

It’s all a process.
