Another day of Wind Chills in the Minus Teens π & Tonight our Wind Chill Warnings will be lasting until 9am Monday. Lots of EXTRA Barn Care today so we needed a quick supper...what's better on a bone chilling day than a good, old-fashioned soup dinner! π
SOUPER Easy Supper for 2! Get your Soup Pan Ready! EASY PEASY Souper Supper!
1) 32 oz. Beef Broth...Organic & Homemade if you have it...if you don't ANY box of Beef Broth will do! We don't need to be FANCY.
2) 2 Good Sized Carrots π₯
3) Minced Garlic...fresh if you want to mince or from a jar is just fine...the amount depends on your taste. Personally, I just add garlic until the Grandmothers above say stop. It's Cold & Flu π€§ Season so don't be shy...add a Good Healthy Amount! Put these ingredients together in your soup pan and boil until carrots are softened.
4) Hamburg...the measurement is enough Hamburg to make 2 Hamburgers...OR more of you got it. Tonight I had just enough for 1 1/2 hamburgers and it turned out just fine! Just fry this up...add seasoning (pepper & salt are fine but you can always add some steak season. Drain well add it into the soup pan.
5) ORZO pasta...when I want a thin soup I use 1/2 Cup...when I want soup that's more like a stew I add 1 Cup. Tonight I used the balance I had 3/4 Cup.
OPTION #2 Now if you don't have Orzo Pasta use 1-2 Medium potatoes. If you use the potatoes π₯ make sure you add them WHEN you add the Carrots π₯.
Now this is a simple dinner for 2 but if you have more people just double out the ingredients. When we were a Family of 5 I tripled the ingredients out & had a some left overs for another day!

So, Beautiful Creatures of My World, supper was decided to be medium-well mushroom smothered steak & a raspberry lime Spin Drift Sparkling Water...easy-peasy.
Before 7pm I will end the day with a banana & 3 strawberries & a small cup of mint tea for a little sweet treat. Another day done without the heaviness of Carbs or Sugary Sweets. Does it mean I have given up on Carbs? Absolutely NOT! We Polish Gals just LOVE our breads & I do enjoy a nice bowl of pasta! Have I given up on ALL sugary Sweets? NOPE...every other week I have a cheat day and I give myself permission to enjoy a sugary sweet or two!
Somedays are a perfect blend of veggie, meat & fruits...while other days are just top heavy on the meat (protein).
This is just about feeling Good & for me feeling good is about eating in moderation while NOT feeling like I'm missing out on things. Keeping myself fit enough to withstand the cold & flu season. Every day is a new day...with a new menu & if I stress eat a thing or two I'm going to show myself some extra Grace....this is NOT about being rigid or eating the perfect diet. This is NOT about losing drastic amounts of weight. This is NOT about a "boring" diet.
If I get out on my snowshoes & get some exercise it's Wonderful & if I don't leave the house that's just fine too. If I decide to spin wool after supper instead of doing the dishes...the world isnt going to come to a screeching halt. Everything in Moderation π

It's 2026 & we continue to thrive with our More Whole, Organic & Less Processed Food Lifestyle! This is my Typical day meal:
Breakfast Of Champions π€£ βοΈ The Dang Good Kind (2 cups) with a splash of real Cream. For the rest of the Day the Hydration is water from our Berkey.
Brunch (Or Second Breakfast): A Green Goddess Salad (lettuce & a mini cuke) with a pinch of Mozzarella Cheese on top and 3 (healthy, top heavy) tablespoons of cottage cheese. The cottage cheese is my Salad Dressing.
Lunch: KimChi! Roughly 2 tablespoons because it's SPICY! And I try to stick to the serving size. AND a Protein Shake (because I LOVE these!)
We haven't decided on Supper yet...
Now off to do a little wool spinning! Today I'm finishing off my Blueface Leicester because Baby...it's just too cold outside! The Wind Chill has us feeling like -13Β° In the Far North of Maine! π₯Ά
