Oh, so good on a chilly night! 🌟 This recipe takes a bit to simmer, but the flavor is worth every minute. I swapped a few ingredients—because who doesn’t? Here's tonight's version: Salmon Coconut Soup

✨ Ingredients:

Organic vegetable broth
Light unsweetened coconut milk (68% less fat)
Zested lime, fresh ginger, and garlic (simmered for 30 min)
Diced onion and red bell pepper sautéed for 5 min
Broccoli rabe and bok choy (instead of broccoli and shallots)
Squeezed lime juice, maple syrup, and cubed wild salmon
Simmer it all together, and finish with fresh sliced jalapeño for garnish. 🌶️ Pro tip: You can skip the salmon or swap in another protein—it’s just as amazing! 🥣 #HealthyEats #ComfortFood #SoupSeason
