Learn how to garden, preserve the food from that garden, make things, diy and much more!
Hi my name is Rebecca. I live with my husband Phil on a corner lot in the small town of Wrens, GA. When we moved "in town" I thought our self sufficient days were over but I just couldn't leave it behind. I love making, doing and learning things so I have made our small backyard into my vegetable garden with room for my greenhouse and fruits and berries. Come join me in my continued quest for self sufficiency even..."in town"

A few more jars of stock going on the shelf. I only had two jars left. It's not much but this was a rotisserie chicken from the store and they are absolutely tiny these days. Still no reason to waste the carcass when you can make good stock with it. I often use a jar at lunch with some Japanese noodles, a few vegetables, soy sauce, garlic powder and ginger.

This weekend we will be making and canning ketchup. If you would like to make it with me you will need 24 oz tomato paste, corn syrup, onion powder, garlic powder, white vinegar, sugar, salt and water.

Not huge but for the first carrots I have ever successfully grown here, I am pretty pleased. Going to let the rest grow some more but I couldn't resist picking a few to see how they were doing.

Not much going on here lately. It's cold! My winter beds are covered but we aren't exactly going to do a garden tour right now.

I am canning 5 packages of mushrooms today and blanching some kale to put in the freezer. I thought about canning the kale but it takes 70 minutes to can kale and not nearly that long for me to blanche it and freeze it. I would have to have a lot more kale to make it worth canning. So I have 4 bags of kale in the freezer and more jars of mushrooms. There's a pork roast in the crock pot and it rained today to water the garden well.

I'll be trying out 3 different sourdough starters in my next video. The first one will be Whole Wheat Sourdough Starter from a 1977 book called Rita Davenport's Sourdough Cookery.
1/2 tsp dry yeast
3/4 cup warm water (110 F, 43 C)
3/4 cup whole wheat flour
Dissolve yeast in warm water. Stir in flour and mix well. Store in a clean, covered plastic container large enough to allow for expansion. Place in a warm area for 18-20 hours. Stir occasionally. At this point starter may be stored in refrigerator.
Keep starter active by adding equal portions of whole wheat flour and water at least once a week if starter is not replenished with normal use.

I emptied 6 pints today. Three pints of turkey stock went in the crockpot for soup. Along with a pint of turkey (plus the liquid), a pint of carrots (plus the liquid), dried shallot scapes pieces that I had dehydrated this summer, dried sage also from the garden and salt and pepper. Later when my husband got home he made some noodles (he likes white but I have to have wheat so he makes the pasta separate then we combine them with the soup in a bowl. I could have put in a jar of mushrooms but decided to save that for weekend soup since mushrooms cause gas.
The last pint was just a jar of cranberry juice that I drank with my lunch.
It may be frosty and cold outside but we were definitely warmed by our turkey soup supper.
Coming soon: Sourdough and growing mushrooms.
