Recipe: Creamy Garlic Butter Tofu Pasta with Crispy Bok Choy
Ingredients:
• 200g pasta (spaghetti or fettuccine)
• 200g firm tofu (cut into cubes)
• 1 small bunch bok choy (chopped)
• 4 cloves garlic (finely chopped)
• 1 small onion (finely chopped)
• 1 cup coconut cream (or heavy cream for non-vegan)
• 2 tbsp butter (or vegan butter)
• 1 tbsp olive oil
• 1 tbsp soy sauce
• 1 tsp chili flakes (optional)
• ½ cup grated Parmesan (or nutritional yeast for vegan)
• Salt & black pepper to taste
Instructions:
1. Crispy Tofu & Bok Choy:
• Heat olive oil in a pan.
• Add tofu cubes, season with soy sauce, and cook until crispy (about 5 minutes).
• Remove tofu, then stir-fry bok choy for 2 minutes until slightly crispy. Set aside.
2. Garlic Butter Sauce:
• In the same pan, melt butter and sauté garlic and onions until golden.
• Add coconut cream, chili flakes, salt, and pepper. Stir well.
• Let it simmer for 3 minutes, then mix in Parmesan.
3. Cook the Pasta:
• Boil pasta according to package instructions. Reserve ½ cup pasta water.
4. Combine Everything:
• Add cooked pasta to the sauce, tossing well. Use pasta water if needed for a creamy consistency.
• Top with crispy tofu and bok choy.
5. Final Touch:
• Garnish with more Parmesan, black pepper, and chili flakes. Serve hot!
