I love making stir-fry because it's so easy and I can use a variety of veggies from my garden. The base of my favorite stir-fry is ground chicken (I use boneless skinless thighs and just grind them in the food processor - cheaper than buying "ground chicken"), Thai basil, chopped ginger, and chopped garlic, and the sauce I love most is black soy sauce. Then I add whatever other veggies I have on hand. To this one I added onion, bell peppers, sweet marconi peppers, fairy tale eggplant, and I also tossed in a few green beans that I had harvested. I served it with jasmine rice.
If your tomato plants look like this a tomato horn worm is probably the culprit. We just removed SIX of them, and I've removed four a few days ago. They blend in well and are hard to see, but fortunately they are slow moving and very easy to catch. Pro tip, check for them at night with a black light; they will glow.
Cooler weather has kickstarted my tomatoes back into production. I made a simple 5-ingredient burst cherry tomato sauce with these: tomatoes, basil, garlic, olive oil, salt.
Today's okra harvest, before and after roasting. Tip: to minimize okra sliminess, cook it at a high temperature. I roasted this at 425 and it came out perfect and has very little slime.
