Welcome to the world of Too Many Hobbies, Not Enough Time!
This is ever evolving as it is a collection of things that I need/want to address or do in my daily life. It may be a bit random, but that is my life at times.
Some of the topics we will explore include 3D printing, gaming, model trains, home improvement, wood working, camping, photography, gardening, kites, and…spreadsheets. Hard to get excited about that last one, but I like to get my nerd on!
Please be patient as I am dusting off some much older hobbies to run this channel. It has been a while since I have exercised my digital media muscles – to build a YouTube channel, video and post-production, and the related marketing that comes with creating content that I would enjoy watching.

Welcome to the new folks, even in my absence you managed to find the home for chaos.
For anyone paying attention...time got away from me.
This time of year tends to be crazy - at work, getting ready for the holidays, etc.
This year is the same and very different all at once.
To boot (pun) I think the power supply on my computer is going bad or under powered.

Learned an important lesson yesterday...pay attention to how much filament you have! I didn't realize that I had burned through an "whole" spool. It was only 750g, so not a full sized spool. I ran out in the middle of a print! Loving the PC (polycarbonate) filament.

For 10 to 14 lb turkey.
Disassemble turkey into major parts, reserving carcass and odd bits for stock later.
Wings are reserved to top dressing while cooking.
For the brine:
1 cup kosher salt
1/2 cup light brown sugar
1 gallon vegetable stock (use up to this amount to cover turkey with liquid)
1 tablespoon black peppercorns
1 1/2 teaspoons allspice berries
1 1/2 teaspoons chopped candied ginger
1 cinnamon stick
Rough chop vegetables of choice.
radish (8 or so)
yucca (12 inch)
potatoes (8 or so)
acorn squash (medium) OPTIONAL, it cooks to nothing
onion
celery
carrot
dried mushrooms (1 oz package or so; add to 1 cup white wine; microwave for 1 minute)
bay leaves (2 or 3 depending on size)
5 or 6 sprigs of fresh time
garlic (6 or so cloves)
Air dry turkey parts on cooling rack while they come up to room temperature. 1 to 2 hours depending on your schedule.
Preheat the oven to 500 degrees F.
Place rough chopped vegetables in bottom of roasting pan. Reserve wine from mushrooms.
Place turkey parts on top of veg with breasts toward the middle of the pan and dark meat toward the outside of pan for even cooking.
Brush turkey skin with 2 Tbsp melted butter. Season with cracked pepper.
Roast the turkey on lowest level of the oven at 500 degrees F for 30 minutes.
Remove from oven and add heated "turkey mother" or 4 cups low sodium chicken broth, and wine from mushrooms.
Cover with parchment, then foil on top. Place back in oven.
Reduce oven to 325 and cook for 1 - 2 hours until breast registers 160 and thighs reach 175.
After 1 hour, temp breast and thighs to 165 degrees. If more time needed, check every 15-20 minutes until 160.
If more "color" is desired on turkey skin, remove foil and parchment and turn broiler on low (400 degrees) and watch for desired color. DO NOT LEAVE the oven at this point. About 5 to 20 minutes depending on power of oven.
Remove pan from oven
Let the turkey rest, loosely covered with foil for at least 20 minutes before carving. Up to 1 hour for rest.
