Firm white fish (kingfish, cod, haddock) – 500 g
Coconut oil – 2 tbsp (28 g)
Onion (finely sliced) – 150 g
Tomato (chopped) – 120 g
Coconut milk – 400 ml
Tamarind pulp – 1Β½ tbsp (25 g)
Water – 200 ml
For Curry Paste:
Grated coconut (fresh or frozen) – 80 g
Dried red chilies – 6–7 (adjust to taste)
Coriander seeds – 1 tbsp (8 g)
Cumin seeds – 1 tsp (3 g)
Black peppercorns – Β½ tsp (2 g)
Turmeric powder – Β½ tsp (1 g)
Garlic cloves – 5 (20 g)
Ginger – 1-inch piece (10 g)

Soak dried red chilies in hot water for 15 minutes.

Blend soaked chilies with all curry paste ingredients and a little water into a smooth paste.

Heat coconut oil in a pan, sautΓ© onions until soft and lightly golden.

Add tomatoes and cook until oil separates.

Stir in prepared curry paste and cook on medium heat for 3–4 minutes until aromatic.
Add coconut milk, water, and tamarind pulp.

Bring to a gentle boil.

Add fish pieces, cover, and simmer for 8–10 minutes until fish is cooked.

Adjust salt, rest for 5 minutes, and serve hot with steamed rice.

Large shrimp, peeled & deveined – 500g (12–14 pcs)
All-purpose flour – 3 tbsp (24g)
Salt – Β½ tsp (3g)
Black pepper – ΒΌ tsp (1g)
Eggs – 2, beaten
Shredded coconut – 1 cup (80g)
Panko breadcrumbs – Β½ cup (50g)
Cooking oil – Β½ cup (120ml) for frying
Lime wedges – for serving
Sweet chili sauce – for dipping

Instructions:
Pat shrimp dry with paper towels. Season with salt and black pepper.

Prepare three shallow bowls:
Bowl 1: Flour
Bowl 2: Beaten eggs
Bowl 3: Mix shredded coconut + panko breadcrumbs.

Dredge each shrimp in flour, then dip into egg, and finally coat with coconut-panko mixture.

Press lightly to stick.

Heat oil in a skillet over medium heat. Fry shrimp in batches until golden brown and crispy (about 2–3 min per side).

Green chili – 1 (optional, finely chopped)
Yogurt – 3 tbsp (45 g)
Red chili powder – 1 tsp (5 g)
Turmeric powder – Β½ tsp (2 g)
Garam masala – 1 tsp (3 g)
Coriander powder – 1 tsp (5 g)
Cumin powder – Β½ tsp (2 g)
Kasuri methi (dry fenugreek leaves) – 1 tsp (1 g)
Salt – to taste
Fresh coriander – 2 tbsp (chopped, for garnish)

Instructions:
Boil eggs, peel, slice and set aside.

Heat oil in a pan. Add chopped onions and sautΓ© until golden brown.

Fresh coriander – for garnish
Ginger juliennes – for garnish

Instructions:

Heat ghee and oil in a pan over medium heat.

Add onions and sautΓ© until golden brown.

Add ginger and garlic paste, sautΓ© for 1-2 mins until aromatic.

Add chicken pieces and cook for 5 mins until lightly browned.

Cumin seeds – 1 tsp (2.5 g)
Bay leaf – 1
Cloves – 4
Black peppercorns – 8–10 (about 1 tsp / 2 g)

Red chili powder – 1 tsp (3 g)
