Firm white fish (kingfish, cod, haddock) β 500 g
Coconut oil β 2 tbsp (28 g)
Onion (finely sliced) β 150 g
Tomato (chopped) β 120 g
Coconut milk β 400 ml
Tamarind pulp β 1Β½ tbsp (25 g)
Water β 200 ml
For Curry Paste:
Grated coconut (fresh or frozen) β 80 g
Dried red chilies β 6β7 (adjust to taste)
Coriander seeds β 1 tbsp (8 g)
Cumin seeds β 1 tsp (3 g)
Black peppercorns β Β½ tsp (2 g)
Turmeric powder β Β½ tsp (1 g)
Garlic cloves β 5 (20 g)
Ginger β 1-inch piece (10 g)
π©βπ³ Method:
Soak dried red chilies in hot water for 15 minutes.
Blend soaked chilies with all curry paste ingredients and a little water into a smooth paste.
Heat coconut oil in a pan, sautΓ© onions until soft and lightly golden.
Add tomatoes and cook until oil separates.
Stir in prepared curry paste and cook on medium heat for 3β4 minutes until aromatic.
Add coconut milk, water, and tamarind pulp.
Bring to a gentle boil.
Add fish pieces, cover, and simmer for 8β10 minutes until fish is cooked.
Adjust salt, rest for 5 minutes, and serve hot with steamed rice.

Large shrimp, peeled & deveined β 500g (12β14 pcs)
All-purpose flour β 3 tbsp (24g)
Salt β Β½ tsp (3g)
Black pepper β ΒΌ tsp (1g)
Eggs β 2, beaten
Shredded coconut β 1 cup (80g)
Panko breadcrumbs β Β½ cup (50g)
Cooking oil β Β½ cup (120ml) for frying
Lime wedges β for serving
Sweet chili sauce β for dipping
Instructions:
Pat shrimp dry with paper towels. Season with salt and black pepper.
Prepare three shallow bowls:
Bowl 1: Flour
Bowl 2: Beaten eggs
Bowl 3: Mix shredded coconut + panko breadcrumbs.
Dredge each shrimp in flour, then dip into egg, and finally coat with coconut-panko mixture.
Press lightly to stick.
Heat oil in a skillet over medium heat. Fry shrimp in batches until golden brown and crispy (about 2β3 min per side).
Drain on paper towels. Serve immediately with lime wedges and sweet chili sauce.

Cumin powder β Β½ tsp (2 g)
Kasuri methi (dry fenugreek leaves) β 1 tsp (1 g)

Instructions:
Boil eggs, peel, slice and set aside.
Heat oil in a pan. Add chopped onions and sautΓ© until golden brown.
Add ginger-garlic paste and green chili, sautΓ© for 1β2 minutes until fragrant.
Stir in tomato puree and cook until oil separates from the masala.
Add red chili powder, turmeric, garam masala, coriander, cumin powder, and salt. Cook for 2β3 minutes.
Reduce heat, mix in yogurt, and cook for another 2 minutes.
Add boiled eggs to the masala and coat them gently. Sprinkle kasuri methi and cook for 2β3 minutes.

Tomato (sliced or chopped) β 100 g (1 medium / ΒΎ cup)
Ginger garlic paste β 1 tbsp (15 g)
Green chilies β 2 (about 10 g)
Cumin seeds β 1 tsp (2.5 g)
Bay leaf β 1
Cloves β 4
Black peppercorns β 8β10 (about 1 tsp / 2 g)
Cinnamon stick β 1 small (about 1 inch / 2.5 cm)
Salt β 1Β½ tsp (9 g)
Red chili powder β 1 tsp (3 g)
Garam masala β 1 tsp (3 g)
Fresh coriander (chopped) β 2 tbsp (8 g / ΒΌ cup loosely packed)
Water β 500 ml (2 cups)

Wash the rice and soak for 30 minutes. Drain well and set aside.

Stir in ginger garlic paste and green chilies; sautΓ© for 1 minute.

Chicken Mince β 500 g
Boiled Potatoes (smooth mashed) β 2 medium (200 g)
Onion (very finely chopped) β 1 small (70 g)
Garlic (grated) β 1 tsp (5 g)
Green Chili (finely chopped) β 1 tsp (5 g)
Black Pepper Powder β 1 tsp (3 g)
White Pepper Powder β Β½ tsp (1.5 g)
Salt β 1 tsp (5 g) or to taste
Bread Slices (soaked & well squeezed) β 2 slices (60 g)
Fresh Coriander (chopped) β 2 tbsp (10 g)
Egg (for mixture) β 1 medium
π₯£ For Coating:
Egg (beaten) β 1 medium
Breadcrumbs β 1 cup (60 g)
π³ Method:
In a bowl, add chicken mince, mashed potatoes, onion, garlic, green chili, soaked bread, egg, salt, black pepper, white pepper, and coriander.
Mix very well until soft, sticky, and well combined.
Shape mixture into oval or round cutlets.
Dip each cutlet in beaten egg, then coat evenly with breadcrumbs.
Place coated cutlets on a plate and refrigerate for 10β15 minutes (important step).
Heat oil on medium heat and shallow fry cutlets until golden brown and crispy from both sides.
Drain on kitchen paper and serve hot.

Donβt let the oil get too hot, or the coating will burn.
