I have just come up with a no-bake pie that is going to go into the regular holiday goodie rotation & I want to share with you!
Introducing: no-bake peppermint hot cocoa pie

Ingredients: 3 cups heavy whipping cream (2 for pie, 1 for topping)
1 package chocolate fudge instant pudding
1 prepared graham cracker crust (I used store bought)
2 tbsp peppermint syrup (I used Jordans skinny syrup);
4 mini candy canes crushed
1 tbsp instant vanilla pudding

In a bowl, whisk chocolate fudge instant pudding with 2 cups heavy whipping cream and one TBSP of peppermint syrup. It will thicken very quickly. Once stiff peaks have formed, turn out into the prepared pie crust, cover and refrigerate for about 2 hours.

Before serving, prepare topping:
Crush candy canes
Then:
In medium bowl, whisk 1 cup heavy whipping cream with 1 TBSP peppermint syrup and 1TBSP vanilla instant pudding (acts as a stabilizer)
Whisk until stiff peaks form

Sprinkle 1/2 of the candy cane pieces on the chocolate pie, then spoon whipped cream on top, and sprinkle remaining candy cane pieces over the rest of the pie.
