When milk is boiled and then left undisturbed, a creamy layer forms on top, which is known as malai.
This happens because of three simple steps:

First, heating changes milk proteins.
The proteins lose their natural structure and start interacting with fat globules.

Second, when the milk is kept still, these protein–fat particles move upward and collect on the surface.

Third, during cooling, this layer sets and becomes visible as malai.

That’s why:

Stirring prevents malai formation

Low-fat milk forms very little malai

Buffalo milk forms thicker malai than cow milk

Recombined Milk vs Reconstituted Milk 🥛 — Do you know the difference?

These two terms look similar but are completely different in dairy processing.

🔹 Recombined Milk is created by mixing milk fat + skim milk powder + water.
Here, fat and SNF come from different sources, and processors adjust fat levels separately.
This method is used when milk fat supply is uneven and is common in standardized milk, UHT, and recombined dairy products.

🔸 Reconstituted Milk, on the other hand, is made by mixing milk powder + water only.
In this case, both fat and SNF come from the same powder, and fat level depends on whether it's SMP or WMP.
It is generally used when liquid milk availability is low, especially in institutional supply, bakery, and UHT products.

बचौर नस्ल बिहार के सीतामढ़ी, दरभंगा और मधुबनी जिलों से उत्पन्न हुई है। आज यह नस्ल नेपाल सीमा से सटे क्षेत्रों, विशेषकर बचौर और कोइलपुर में अधिक पाई जाती है।

मुख्य विशेषताएँ:

कम पोषण वाले चारे पर भी आसानी से जीवित रहती है।

रंग: सफेद या धूसर।

शरीर कॉम्पैक्ट, पीठ सीधी।

सींग मध्यम आकार के, बाहर की ओर मुड़ते हैं।

बैल लम्बे समय तक निरंतर काम कर सकते हैं।

चारागाह आधारित प्रबंधन में पाले जाते हैं।

प्रमुख रूप से कोइर और अहीर समुदाय द्वारा पालन।

औसत दूध उत्पादन: 347 किग्रा/दुग्धावधि।

दूध की वसा: लगभग 5%।

यह नस्ल ग्रामीण कृषि और पशुपालन व्यवस्था में मज़बूती और सहनशीलता का एक बेहतरीन उदाहरण है।
