I’m pickling 2 cups of garlic today—and I have a feeling this may become one of those things I keep in the refrigerator at all times.
Tangy. Spicy. A little sweet. And that gorgeous garlic flavor, but mellowed out by the vinegar.
I'm already thinking about putting it on salads, grilled chicken, grain bowls… and honestly, eating it straight from the jar. 😂

I love you.
I really do.
But could you please stop trying to turn my kitchen into a sauna?
When it's this hot, I'm not looking for complicated recipes. I'm looking for cold, crunchy, colorful and satisfying.
Tomatoes. Cucumbers. Peaches. Berries. Beans. Fresh herbs. Avocado. Nuts. A little feta. Something cold, something chilly. Lots of lemon, maybe?
Basically, if it can go into a giant bowl and be dressed with olive oil, I'm definitely interested.
Because healthy eating shouldn't require suffering through 400 degrees of kitchen heat.
Eat beautifully. Eat simply. Stay cool.

🥵 IT IS TOO HOT TO COOK.
There. I said it.
If your kitchen currently feels like a sauna with a stove, I am giving you permission to NOT TURN ON THE OVEN. 😂
Healthy eating does not require sweating over a pot of something while the air conditioner fights for its life.
Today, I’m thinking:
🥒 crunchy cucumbers
🍅 juicy tomatoes
🍑 cold, sweet summer fruit
🫘 beans straight from the fridge
🐟 good canned fish
🥑 avocado
🌿 lots of fresh herbs
🍋 lemon + olive oil
Put it all on a plate.
Add something with protein. Add something with fiber. Add something delicious.
And call it dinner.
Because healthy eating isn't supposed to be punishment.
Sometimes the healthiest thing you can do is eat a beautiful cold meal, drink some water, sit somewhere cool, and stop trying to be a hero. 😂
Summer is short.
